Golden Delicious are particularly good in these rolls. They give the bread the sweetness it needs.

    apples (Golden Delicious)
  • 1 dspn
    cinnamon
  • 1 tsp
    aniseed
  • 2 dspn
    sultanas
  • 3 - 4
    walnuts, hazelnuts, pumpkin seeds or sunflower seeds
  • 500 g
    wholemeal spelt flour
  • 1 tsp
    salt
  • 350 ml
    naturally-cloudy apple juice (lukewarm)
  • 20 g
    yeast
  • 1 - 2 dspn
    honey
  • 40 g
    butter

Instructions - Sweet apple bread

    Step
    Wash and roughly chop the apples. Mix in cinnamon, aniseed, sultanas and nuts.

    Step
    Put flour in a bowl and add salt. Stir together apple juice, yeast and honey, add to flour and knead well. Finally, fold in the butter.

    Step
    Cover the dough and leave to prove until it has doubled in size.

    Make portions with a spoon, roll in wholemeal flour and leave to rise on a floured baking tray.

    Bake the rolls for 25 to 30 minutes in an oven pre-heated to 180° C (with fan).
