Mushroom farming is an art that has to be learnt: the right level of moisture, precise temperature control and careful examination of cultivation conditions are crucial for producing healthy, tasty edible mushrooms. Freshly-picked ‘Red Rooster’ mushrooms coming from organic farms in South Tyrol may be purchased all year round. Their cultivation forms part of the agricultural cycle: the substrate that provides the soil for the mushrooms is later used as fertilizer on the farm. A protective desiccation process as well as preservation in oil conserves these nutrient- and protein-rich treats, without any use of artificial preservatives.
