Historical Zollweghof farm lies at the start of Ultental valley on the hills above Lana and has been organically farmed for 30 years. In its 14th-century wine cellar, fine wines mature in amphorae and wooden casks. “We really care about making high-quality wines from biodynamically grown grapes in order to provide the most natural of wine enjoyment experiences” stresses Franz, the vintner.
This is especially true of a glass of wine bearing the ‘Red Rooster’ trademark. Own-produced grapes of the highest quality as well as careful processing on the farm guarantee a uniquely enjoyable effect on the palate. South Tyrol’s sunshine and clear mountain air lend the grapes their special aroma. It’s good that the origin of the grapes – straight from the farm – plays such a crucial role at ‘Red Rooster’. The farmers take the processing of grapes seriously, as well as taking care to get rid of any grasses and weeds around the vines using mechanical means. A board of experts then tests the sensory quality of the wine.
