The Seppi family has been processing its grapes to make fine wines and particularly mild grappa for generations. ”As we follow all of the production steps from the vine to the bottle, we can provide the best possible quality”, is how Markus Seppi explains his recipe for success. Guided tours of the cellar, visits to the distillery and tasting sessions are available when booked in advance.
The production of spirits enjoys a long tradition in South Tyrol and every farmer jealously guards his own secret recipe. The 'Red Rooster' brand is synonymous with high quality spirits, produced in South Tyrolean farmhouses from fruit grown on the farm. The 'Red Rooster' brand features only excellent spirits selected and matured to just the right point. Besides undergoing a sensory check, all spirits are analysed yearly for their methanol content and every three years for their copper content in order to guarantee maximum safety and quality. The long maturation period lends the spirits an even more delicate taste.
This is especially true of a glass of wine bearing the ‘Red Rooster’ trademark. Own-produced grapes of the highest quality as well as careful processing on the farm guarantee a uniquely enjoyable effect on the palate. South Tyrol’s sunshine and clear mountain air lend the grapes their special aroma. It’s good that the origin of the grapes – straight from the farm – plays such a crucial role at ‘Red Rooster’. The farmers take the processing of grapes seriously, as well as taking care to get rid of any grasses and weeds around the vines using mechanical means. A board of experts then tests the sensory quality of the wine.
