On Römerhof farm, the Giovanett family grows an old type of corn that 50 years ago used to be known as 'Tirggplent' in the South Tyrol Unterland. The typical orange-red ears of corn are milled into three different types of gluten-free flour in the farm stone mill involving a series of traditional steps.
Bread, pasta and grain - The smell of fresh bread wafts through the air
Cereal production and the age-old tradition of baking bread are undergoing a resurgence - without chemical baking aids, carefully worked by hand and baked in wood-fired ovens. Crusty bread specialities with an irresistible fragrance are created from farm flour. 'Red Rooster' quality brand cereal comes straight from the farm and is milled and worked there. It is the simplicity of it that makes farm bread bearing this seal of quality taste so good: flour coming from own farmland, water and salt as well as working by hand help the cereal to develop its flavour more fully. Not forgetting that baking in wood-fired ovens lends the bread its unmistakable taste.
