The 'Partschillerhof' is situated on the sunny side of Völs am Schlern/Fie`allo Sciliar at a height of 650 m, amidst vineyards and orchards. Andreas, the 'Partschillerhof's' organic farmer, is a real expert in fruit processing. As a result of his competence and expert knowledge, he produces raspberry vinegar and also pure fruit cordials, jams, pickled raspberries and sauerkraut, placing great importance on natural production methods.
Fruit cordials - All the taste without the chemicals
Whether produced from fruit, flowers or herbs, home-made cordials are getting more and more popular. It's not surprising: these cordials, with their unmistakeable taste, put other soft drinks in the shade. The 'Red Rooster' seal of quality guarantees that only top quality original products go into their production. Beet sugar or brown sugar is added to make all types of fruit, flower or herb cordials following ancient recipes. While the fruit, flowers and herbs come straight from the farm, the sugar cannot be produced there. In the case of cordials, 25% of the product may be bought when counted as part of the fruit content. The cordials are bottled with care and sold under the 'Red Rooster' brand name as pure or mixed cordials.
Red Rooster' jams are especially appreciated for their high quality and unrivalled taste. Only fresh sun-ripened fruit processed without additives is used to fill the jars, whether for single fruit or mixed fruit jam. Raspberries, strawberries, blackcurrants, plums, apricots, cherries or chestnuts, the variety of hand-picked, top quality fruit made into delicious jams on the farm, is wide. The success of these jams lies in their high fruit content and low sugar content, which lends unbeatable taste. Besides this, after being chopped up, the fruit is cooked with care in order to preserve vitamins, taste and colour.
Vinegar - Exquisite specialities from natural sources
Making vinegar is one of the oldest processes known to food production and takes place on South Tyrol's farms, too. A variety of vinegar specialities offer a vast number of ways to improve dishes. The basic ingredients play a decisive role in the quality of the end product when it comes to vinegar, too. Only high quality fruit and the best wines are used to make 'Red Rooster' vinegar. For fruit vinegar, acetic acid content has to be minimum five percent and for wine vinegar, minimum six percent. The vinegars unfold their full aroma after being given adequate time to mature and are then bottled.
The 'sauces and pickles' product group unleashes an explosion of taste sensations: whether spicy or sweet, pickled in vinegar or preserved in oil – these 'Red Rooster' delicacies have one thing in common: they promise a lot of taste, completely free of additives. The raw ingredients for fine sauces, jams and pestos must be likewise as impeccable as those for pickled fruit and vegetables. While the former make for the right level of spiciness with their creamy consistency, the latter are fresh and crunchy.
