Starter

Wild herb salad with egg

ingredients ( serves 4 persons )

around 400 g wild herbs (dandelion, sorrel, ground elder, clover, nasturtium, meadow sage, yarrow, a small amount of ribwort)
salt and pepper
4 tbsp apple vinegar
4 tbsp olive oil
4 hard-boiled free-range eggs
edible flowers to garnish (e.g. meadow sage or nasturtium)

preparation

Carefully wash the wild herbs, dry and place on 4 plates. Then dress with salt, pepper, apple vinegar and olive oil. Serve the hard-boiled eggs with the salad and garnish with edible flowers if desired.
