Upper Vinschgau bread soup

ingredients

Ingredients for 2 persons
2 eggs
150 g stale spelt bread
1 large tbsp of butter
1 pinch of salt and nutmeg
500 ml beef stock

preparation

Dice spelt bread and mix with 2 eggs that have been seasoned with a pinch of salt and nutmeg. Melt the butter and slowly fry the eggs and bread cubes until golden. Leave to cool and put into 2 soup bowls, sprinkle with some finely chopped chives and pour the beef stock over it. Serve hot.
