‘Spitzbuben‘ biscuits

ingredients

Ingredients (makes about 20 biscuits):
some lemon zest (grated)
150 g butter
1 pinch salt
150 g sugar
2 eggs
300 g flour
apricot jam for filling
1/2 packet vanilla sugar
icing sugar for dusting
1/2 packet baking powder

preparation

Cream softened butter, add sugar and stir until smooth. Combine with the other ingredients and knead into a smooth dough. Allow to rest in the fridge for half an hour. Roll out dough until ½ cm thick. Cut out rings from one side and rounds from the other. Bake in oven pre-heated to 180° C for about 8 minutes. Allow biscuits to cool and spread with apricot jam. Dust rings with icing sugar and place on top of biscuits.
