First you have to mix the raw spinach with the clove of garlic and then add the eggs, milk and a little nutmeg. Slowly stir the flour into the mixture and add salt. Now stir with a wooden spoon until you have a smooth dough. Now scoop the spinach mixture into boiling salted water and always stir. Bring the spaetzle to the boil briefly until they float on the upper edge of the water and then serve with parmesan and butter.
