Sour jowl of veal

ingredients

400 g jowl of veal, ready cooked
pepper
1 onion
salt
red wine vinegar
1/4 l water or meat broth
oil

preparation

Slice jowl of veal thinly and heat gently in warm meat broth. Peel onions, cut into rings and place on top of jowl slices along with salt, pepper, vinegar and oil.
 Roast jowl of veal
Cut slightly thicker slices and roll in flour before coating with egg and breadcrumbs and frying in hot butter. Serve still hot with potato salad.
