Wash and roughly chop the apples. Mix in cinnamon, aniseed, sultanas and nuts. Put flour in a bowl and add salt. Stir together apple juice, yeast and honey, add to flour and knead well. Finally, fold in the butter. Cover the dough and leave to prove until it has doubled in size. Make portions with a spoon, roll in wholemeal flour and leave to rise on a floured baking tray. Bake the rolls for 25 to 30 minutes in an oven pre-heated to 180° C (with fan).
