Pressed dumplings

ingredients

Makes around 8 dumplings:
100 ml milk
150 g white bread, diced
2 eggs
1 dstspn flour
100 g diced ‘graukäse (or another tangy cheese such as goat’s cheese or gorgonzola)
salt
butter for frying

preparation

Fold the diced cheese and flour in with the bread. Beat together milk, eggs and salt. Combine milk mixture with bread mixture, knead through well and leave to rest for a while. Form dumplings with wet hands and press flat. Fry dumplings until brown on both sides in hot butter. Meanwhile, bring plenty of salted water to the boil and place fried dumplings in water. Remove dumplings with a slotted spoon after 8 to 10 minutes and serve in meat broth with cabbage salad or silver beets.
