Organic oven-roast chicken

ingredients ( for 4 persons )

1 organic roasting chicken

Spice blend (salt, paprika, rosemary, pepper & a little herb salt)

preparation

Rub the chicken with the spice blend inside and out and under the wings. Place directly onto the oven rack at 160° C (fan). Place an oven tray underneath: the fat collected can be used to baste the chicken. Cooking time is approx. 45 minutes per kilo. Core temperature should reach 74° C. Oven-roasted potatoes with rosemary make an excellent accompaniment.
