Mix the flour and milk to form a smooth paste and fold in the sugar, salt and eggs. Heat the butter in a frying pan and add a little of the batter. Shake the pan from side to side to distribute the batter evenly. Cook the omelettes on both sides, spread with apricot jam and roll up. Dust with icing sugar and serve warm.
