Cut the apple into slices of 1 cm thickness. Stir the honey with the lemon juice and thyme to make a marinade, pour onto apple slices and leave overnight. Leave fresh goat's cheese to drain overnight in a sieve. Finely chop the onion, sauté in olive oil and leave to cool. Combine with the chopped nuts and mix into goat's cheese, seasoning with lemon juice, herb salt and pepper. Shape 4 'pralines' from the mixture, place each one on a slice of apple and garnish with 'Speck' roses and marinade.
