Honey semifreddo

ingredients ( Serves 4 )

3 egg yolks
1 free-range egg
80 g honey
2 tbsp rum
300 ml cream
1 pinch of lemon or orange peel (grated)

preparation

Beat the egg yolk and the egg with the honey in a mixing bowl in a bain marie until fluffy. Add the grated lemon or orange zest and the rum and stir until the mixture has cooled. Then fold in the whipped cream. Fill a tin lined with cling film and put in freezer for 3 hours.
