‘Erdapfelblätterle’ potato fritters with cabbage

ingredients

600 g floury potatoes
salt
2 egg yolks
oil for frying
2 dstspn melted butter
500 g cooked sauerkraut
400 g flour

preparation

Boil and mash potatoes and allow to cool. Knead egg yolk, melted butter, flour and salt to a dough. Roll out dough until around 2mm thick, cut out round sheets and lay on a cloth. Fry dough sheets in hot oil until golden brown. Drain well on kitchen paper and serve hot with sauerkraut.
