Dandelion salad with egg

ingredients

3 handfuls of fresh, young dandelion leaves
2 small potatoes
1 small onion
4 hard-boiled free-range eggs
salt and pepper
2 dspn apple vinegar
2 tbsp olive oil

preparation

Boil potatoes in salted water, peel and cut into thin slices while still warm. Carefully wash dandelion leaves, pat dry and chop. Peel onion and chop finely. Mix all ingredients together and marinade with salt, pepper, vinegar and oil. Peel and halve the hard-boiled eggs and serve with the dandelion salad.
