Buckwheat sheets with grilled shiitake mushrooms

ingredients ( Serves 4 persons )

400 g wheat flour
200 g buckwheat flour
3 free-range eggs
2 tbsp semolina
500 g shiitake mushrooms
2 tbsp olive oil
butter
salt and black pepper

preparation

Work flour, eggs and semolina into a smooth dough adding some lukewarm water. Roll the dough out thinly and cut into sheets of dough. Boil these in salted water for around 2 minutes until al dente. In the meantime, grill the shiitake mushrooms (don't cut up) in olive oil. Then season with salt and pepper. Stir-fry the leaves in melted butter and serve with the grilled shiitake mushrooms.
