Boiled beef

ingredients ( serves 4 persons )

1 kg beef (shoulder)
½ onion
50g celeriac bulb
1 carrot
½ leek
4 peppercorns
salt
1 kg potatoes
1 onion (cut into rings)
50 ml red wine vinegar
20 ml olive oil

preparation

Boil the beef for around 2 hours. Chop the onion, celery, carrot and leek into pieces and add to the pot with the peppercorns. Season with salt and boil for another 45 minutes approximately. In the meantime, peel the potatoes, quarter and boil separately in plenty of salted water for around 30 minutes. Take the boiled meat out of the water, cut into thin slices and place on plates with the boiled potatoes. Lay onion rings on top of the meat and drizzle over vinegar and olive oil.
