Beetroot gnocchi

ingredients ( Serves 4 persons )

50g beetroot
wild herb salad
250g ricotta cheese
parmesan cheese
2 free-range eggs
butter (browned)
2 tbsp wheat or spelt flour

2 tbsp white breadcrumbs

a pinch of salt

preparation

Quickly knead all the ingredients to form a dough. Leave the dough in a cool place for half an hour to rest, then form small gnocchi and put them in boiling water for 10 minutes to simmer. Serve gnocchi with parmesan and butter on a wild herb salad.
