Mash potatoes when still warm and knead together with flour, butter, semolina, eggs and salt. De-stone apricots and fill each one with a teaspoon of sugar. Coat apricots in potato dough, place in boiling, salted water and simmer for 5 minutes. Mix together sugar, flour and breadcrumbs, roll dumplings in mixture and put onto plates. Pour over some melted butter and serve.
