Cut the speck into strips and fry until crispy. Peel, core and dice the apples. Wash the celery and cut into fine strips. For the mayonnaise, whisk the egg yolks with salt, pepper, vinegar and mustard until smooth. Slowly pour in the oil and whisk constantly until you have a smooth sauce. Finally mix in the curry powder. Cut the ham into strips and mix into the mayonnaise along with the apple, celery and speck. Cut the bread rolls in half and fill with the mixture. Halve or quarter the sandwiches if you wish.
