Rural inns are not just characteristic of South Tyrol, but are found across the whole alpine area. Between the Brenner pass and the Etsch river valley people have always set great store by hospitality and making guests feel welcome.
Just 27 farms from the whole area have fulfilled the strict quality criteria to become ‘Red Rooster’ farms this year. Over 30% of
raw ingredients for their traditional dishes must come
from the farm itself. Other ingredients may be purchased, but should come
from the surrounding area.

‘Buschenschank‘ is a farm situated in a wine-growing area, which produces and serves its own wine. A
‘Hofschank’ lies outside wine-growing areas and offers at least one meat dish sourced on the farm.
Seasonal specialities such as nettle dumplings, wild garlic ravioli or roasted chestnuts are given the personal touch and served by the farmers and farm family themselves in an atmosphere featuring farm furniture and tiled farm ovens. There are also regional drinks such as home-made fruit juices, spring water or wine.
