‚Knödel’, or Tyrolean-style dumplings, have been a part of South Tyrolean cuisine for a very long time. Savoury varieties are usually made from white bread kneaded with other ingredients and include Speck-Knödel, cheese gnocchi, spinach dumplings, while dumplings with apricots in the centre (Marillen-Knödel), strawberry and plum 'Knödel' are among the seductive dessert specialities. Of course the feasting will accompanied by entertainment including traditional Tyrolean music by local bands. Knödel spiecialities can be tasted in selected restaurants the week before and after the festival.
