Sweet Cheese Gnocchi

ingredients

For the dough:
salt
1 kg di patate
1 cup semolina
6 T butter
for the bread crumbs:
100 g flour
100 g butter
1 cup semolina
breadcrumbs
3 eggs
2 T sugar

preparation

Beat butter, sugar, eggs, and salt until creamy. Stir in baker’s cheese, semolina and raisins. Let stand about 30 minutes. Bring salted water to a boil. Using 2 tablespoons dipped in hot water, form dumplings and drop into water. Allow to simmer for 10 – 15 minutes. Gently transfer to a colander to drain, and arrange on plates. In a skillet, brown bread crumbs in butter. Spread over dumplings.
 Serve with cherry compote.
