‘Muas’ (Dish made with milk and flour)


175 g butter
2 l fresh milk
300 g maize flour (semi-fine polenta)
1 pinch salt
2 dspn wheat flour
approx. 100 ml water


Melt 25 g of butter in a frying pan, add flour, brown for a while and pour water over the mixture. Then add milk, salt, bring to the boil briefly and slowly stir in the polenta. Simmer for 30 minutes on a low heat, stirring constantly, except for the last 5 minutes. Leave the ‘Muas’ to cook, melt the remaining butter in a separate pan until golden brown and drizzle over it.
