10 oz stale white bread
4 eggs
½ cup milk
1 onion
salt, nutmeg
½ cup butter
5 oz cheese (Emmentaler)
½ cup flour
Cheese Dumplings
Cut bread into thin slices. Beat eggs and milk and pour over bread. Sauté finely chopped onions in butter until translucent. Finely dice cheese. Add onions, cheese and flour to bread mixture. Mix well, adding salt and nutmeg to taste.
Form 8 – 10 dumplings from dough. Drop into boiling, salted water, reduce heat once water starts boiling again. Continue simmering approx. 15 minutes until dumplings are done.
