Terlan
Asparagus, popular since antiquity as much for its curative properties as for its delicious flavour, has been cultivated in specific areas in South Tyrol since the end of the 19th century, above all in the “Asparagus Triangle” in the fertile Etschtal valley around the villages Terlan, Vilpian and Siebeneich. In South Tyrol asparagus thrives best in sandy soils in places where the climate is cool. Only the white variety is cultivated in South Tyrol where, grown in the fields around Terlan it develops a very delicate aroma and exquisite flavour. It is harvested just before it breaks through the soil and has not yet been subjected to sunlight to avoid colouration. This most noble of vegetables becomes available very early in South Tyrol.
